What are smokehouse?

  1. Metal mini smokehouse. Well-known for many type of devices, which is a box of stainless steel. Chips are placed on the bottom of the box, and products are placed on a special grid. The advantages of such a device are compact and cheap, and the disadvantages include the need for an open source of fire, which makes it impossible to use such a device in urban environments;

  2. Smokehouse apartment type. Devices whose functionality is similar to the above, but they are intended for use in the apartment. They are made, as a rule, from cast iron and are intended to be used on a gas stove, and a special fitting is used for smoke exhaust, to which a splash is connected to the street. The advantage of such devices is the ability to cook directly in the apartment, the disadvantages are the cumbersome design and inconvenience of use;

  3. Electric smokehouse - a new and very interesting type of device. The heating process here is carried out with the help of special powerful heating elements, while the smoke is supplied through special smoke generators installed inside the device. The advantages of this model are full autonomy, compactness and ease of operation, which is why you can cook almost anywhere where there is a 220V socket. The disadvantages are the high complexity of the design, the need for regular maintenance and high cost - such models are much more expensive than the above-described apartment analogues;

There are a lot of criteria to be paid attention to when choosing a smokehouse:

  1. Smokehouse depth. Affects the total amount of product that can be prepared at one time. The deeper the smokehouse, the more productive it will be and the longer it will take to prepare the product;

  2. Reliability and ability to withstand adverse effects. A good oil lamp should be resistant to the occurrence of soot, not be afraid of the effects of open flame, do not rust or oxidize. In most cases, the best are oil lamps made of thick-walled, about 3-5 millimeters, stainless steel. In the case of domestic smokehouses designed for use on gas, preference should be given to cast iron models, because stainless steel, when exposed to an open source of fire, tends to burn out;

  3. The presence of holes for ventilation. The design of the device should be able to discharge smoke generated during smoking, to the outside;

  4. The presence of a special pan for fat and juice. During the smoking process, fat and excess liquid, inevitably formed, is called juice. If the design does not have a special collection tray, the above-described fluids will drip onto the bottom, thereby pouring chips;

  5. When choosing an electric smokehouse for domestic use, preference should be given to models equipped with different cooking modes and having the ability to adjust the temperature of the heating elements during the cooking process.
